Most recipes are written for a specific number of servings, but you rarely need exactly that number. Scaling a recipe up or down is simple multiplication, but a few ingredients don’t scale as cleanly as the rest.

The Scaling Formula

Scaling Factor = Desired Servings ÷ Original Servings
New Quantity = Original Quantity × Scaling Factor

Worked Example

A recipe serves 4 and you want to serve 6:

What Doesn’t Scale Cleanly

Most ingredients multiply directly by the scaling factor, but a few things need judgment rather than strict math:

  • Awkward measurements. Scaling 1 egg by 1.5 gives 1.5 eggs, not a practical amount. Round to the nearest whole egg, or beat one egg and use half of it by volume for more precision.
  • Strong flavorings. Salt, spices, and hot peppers don’t always need the full scaling factor applied, since their effect on taste isn’t linear with quantity. Many cooks scale these more conservatively and adjust to taste.
  • Leavening agents. Baking soda, baking powder, and yeast often behave differently at larger volumes and may need a smaller increase than a strict multiplication would suggest.
  • Cook time. A larger batch usually needs more time in the oven or pan, but not in direct proportion to the scaling factor. Pan size and dish depth affect cook time more than total volume alone.
